By now, you have probably heard the buzz around the IDDSI (International Dysphagia Diet Standardization Initiative).
IDDSI Basics
IDDSI is standardized terminology, descriptions and testing methods for food and drink preparation. It is designed to improve safety for individuals with chewing and swallowing difficulties. As of October 2021, IDDSI is the only professionally recognized texture-modified diet, replacing the outdated National Dysphagia Diet (NDD). The IDDSI framework includes 8 levels (Level 0-Level 7). Drinks are measured from IDDSI Levels 0-4. Foods are measured from Levels 3-7. Each level has a unique name, number and color to allow quick and accurate identification.
Why IDDSI
Due to the enormous variation in types of foods and drinks as well as their properties, IDDSI provides a common language and system for describing food textures and drink thickness, reducing confusion and variability that can occur. The framework ensures that individuals with dysphagia receive food and drinks that are appropriate for their specific needs and swallowing capabilities. The goal is to achieve consistency across care settings, from hospitals to long-term care facilities, so that individuals receive the same level of care.
Implementing IDDSI
Some key steps of IDDSI implementation include:
- Familiarize yourself with IDDSI by visiting www.IDDSI.org for resources and educational opportunities.
- Form an IDDSI Implementation Team. Include dining, nursing, dietitian, speech therapy and activity staff.
- Create a personalized IDDSI Implementation Calendar.
- Test existing food/drink products and recipes using IDDSI audit tools.
- Communicate changes to staff, residents and families.
